Swiss Apple Cake : Tarte Suisse aux pommes

Good morning, everyone! Here we are at the monthly appointment with Around the world with apple sweets, in which I participate with my friends Simona and Miria. My proposal for this month is a Swiss Apple Cake, a simple and genuine cake, prepared with very few ingredients, but really delicious. Swiss Apple Cake is halfway between a cake and a tart. It has a buttery and delicate dough, and is covered with slices of apples. Easy and quick to prepare, Swiss Apple Cake is perfect for a light and tasty breakfast or for an afternoon snack. It’s fantastic as dessert after dinner, and is an elegant gift to bring to those you love. I brought it to my dad, instead of the tradizional “Bignè di San Giuseppe” and it was very appreciated!

Swiss Apple Cake

An elegant, easy and delicious apple cake that has its origin in Switzerland.

Ingredienti

  • 2 eggs
  • 75 gr sugar
  • a pinch of salt
  • 75 gr soft butter
  • 100 gr all purpous flour
  • 1 tsp baking powder
  • the grated zest of 1 organic lemon
  • 2 apples, sliced
  • 2 tbsp sugar
  • a bit of butter (about 15 gr)
  • icing sugar for serving

Istruzioni

Whip the eggs with the sugar, salt and lemon zest until they are light yellow and fluffy.

Incorporate the soft butter and finally incorporate the sifted flour with the baking powder.

Pour the dough into a buttered and floured 22 - 24 cm baking pan (or line with parchment paper).

Level the dough with the back of a spoon and distribute the slices of apples on the surface.

Sprinkle with the two tablespoons of sugar and distribute small pieces of butter on top.

Bake in a preheated oven at 180°C for about 30 minutes or until golden.

Note

Let the cake cool down a few minutes before unmolding. Serve cold, sprinkled with icing sugar.
