Blueberry Almond Crumble Bars

Good afternoon, everybody! Today I’m sharing a very easy and quick recipe with you, that is perfect for your family’s breakfasts! These Blueberry Almond Crumble Bars are delicious, not too sweet, healthy and nutritious. They are prepared in a only handful of minutes and are chock full of fresh fruit! In this case I used blueberries, that are a great help for our blood circulation, for our memory and so much more, but you can use any kind of fruit, preferably seasonal. For example, strawberries are now in all supermarkets and greengrocers. They are abundant and delectable in this period and are absolutely wonderful in these bars. I have already experienced their scrumptious flavor in this recipe! Moreover, Blueberry Almond Crumble Bars are butter free, so they are also suitable for those who are lactose intolerant or need to limit animal fats in their diet.

Pack these bars individually, for a snack to put in your children’s backpacks. They will be very happy to find a sweet and healthy surprise that will pamper them and energize them properly! These treats are also ideal when you crave for something sweet but you don’t want to go on a guilt trip!

Delicious and healthy blueberry crumble bars, ideal for breakfast or for a snack

Ingredienti

  • 150 g plain flour
  • 50 g durum wheat flour
  • 60 g dark brown sugar
  • 1 heaping teaspoon baking powder
  • the grated zest of 1 organic lemon
  • 1 egg
  • 60 ml safflower oil or light olive oil
  • 1 teaspoon freshly squeezed lemon juice
  • a pinch of salt
  • 20 ml water
  • For the filling:
  • 250 g fresh blueberries
  • 50 g icing sugar
  • a pinch of cinnamon
  • 2 teaspoons cornstarch
  • 25 g chopped almonds

Prepare the filling. Put the washed and dried blueberries in a bowl. Add the icing sugar, cinnamon and cornstarch. Stir and set aside.

Put all the dry ingredients in a bowl and mix.

Blend together the egg, oil, lemon juice, pinch of salt and water until you get a creamy mixture, similar to mayonnaise, but a tad more fluid.

Mix the dry and wet ingredients, using your hands. You should obtain a crumbled mixture.

Take 2/3 of the crumble and cover the bottom of a small, well greased square cake pan, and compact with your hands. Spread the filling over the base and then cover with the rest of the shortcrust, crumbling it over the filling. The filling should still be visible.

Sprinkle with chopped walnuts.

Bake in a preheated oven at 180°C for about 25 minutes or until golden brown.

Let cool before unmoulding and when the cake is cold, cut it into bars.

Note

My pan is 20 X 20 cm and I obtained 12 bars. You can use any fruit you desire for this recipe, best if seasonal.
