Strawberry Vanilla Cupcakes

Hello everyone! You probably already know that I am a big fan of cupcakes. I may have been influenced by my childhood and adolescence  in the USA, but I truly think that cupcakes are lovely! They are ideal for every occasion, from the most elegant to the funnest and they are always a great success! Strawberry and Vanilla Cupcakes are my proposal for Mother’s Day this year. I assure you my friends, that your mothers will appreciate them very much!

In general, cupcakes are very versatile, and can be decorated in many ways. You don’t need to have excellent manual skills to achieve amazing results. All you need is a some frosting prepared with mascarpone, cream and icing sugar, a disposable pastry bag and you’re ready to go! If you also use fresh seasonal fruit for garnishing, you’ll have fabulous, as well as delicious cupcakes!

In this period strawberries are abundant and they are so delicious and beautiful in sweets! They are perfect to celebrate special occasions. I added strawberry pulp to the frosting of my Strawberry and Vanilla Cupcakes and garnished them with a piece of the fruit itself for a fresh, springtime and very delicate touch!

Strawberry vanilla cupcakes

Delicate and delicious strawberry vanilla cupcakes


  • 1 egg
  • a pinch of salt
  • 50 g sugar
  • 1 teaspoon vanilla extract
  • 25 ml vegetable oil (I used safflower)
  • 50 ml milk + 1 teaspoon of white vinegar
  • 100 g plain flour
  • 1 teaspoon baking powder
  • a pinch of baking soda
  • For the frosting:
  • 100 ml non dairy whipping cream
  • 200 g mascarpone
  • 4 or 5 strawberries, blended
  • 60 g icing sugar
  • very little red food coloring (optional)
  • To complete the cupcakes:
  • strawberry jam to need
  • a few pieces of strawberry



Start by making the homemade buttercream. Put the vinegar in the milk, stir and let stand for about 15 minutes.


Whip the egg with the sugar, salt and vanilla.


Incorporate the oil and then the buttermilk.


Incorporate the sifted flour with the baking powder and baking soda, stirring with a hand whisk or a spatula. Do not mix too vigorously, but just enough to blend the ingredients.


Distribute the batter in 6 paper cups, placed in a muffin pan.


Cook in preheated oven at 180°C for about twenty minutes.


Let cool and then make a small hole in each cupcake. Insert a little jam in the hole and cover with the piece of cupcake that you cut, pressing down a bit.


Whip the mascarpone together with the cream and icing sugar, until you get a well blended cream.


Add the strawberry pulp and if you want, a little food coloring to make the frosting pink.


Whip with an electric whisk until the frosting is dense and stands in soft peaks.


Put the frosting in a piping bag with a star-shaped tip and decorate the cupcakes according to your taste.


Garnish with a piece of strawberry and serve!


The addition of food coloring is optional, you can omit it. Your frosting will not be pink, but it will be just as delicious
