Muffins with Fava Beans, Pecorino and Salame

Good morning, everyone! Summertime means picnics, outdoor dinners with friends and short vacations. I have been planning a few…I want to enjoy nature, my mountains, the places of my heart as much as possible … Muffins with Fava Beans, Pecorino and Salame are perfect for these occasions. They are quick to prepare, easy to transport and delicious!

My Muffins with Fava Beans, Pecorino and Salame are so simple to make and were really appreciated by my family! They also combine such amazing flavours from my territory! Fava beans are abundant in this period and my dad’s garden is giving them to us generously.  Eaten with pecorino cheese, they are a great classic in central Italy! If the pecorino and the salame are also Abruzzese, the combination becomes truly delectable! I’m biased, I know 😉 They are perfect for the buffet table or to accompany a refreshing aperitif, and these morsels will conquer you at the first bite. My only advice … Double the ingredients, because your guests will be asking for more!

Delicious savory muffins, ideal for buffets and picnics


  • 1 egg
  • 50 ml sunflower oil
  • 50 g grated pecorino cheese
  • 100 g plain flour
  • 2 tsps baking powder
  • milk to need (about 80 -100 ml)
  • a handful of skinned fava beans
  • 1 fresh onion
  • 3 or 4 cherry tomatoes
  • extra virgin olive oil
  • salt to taste
  • oregano
  • 6 thin slices of salame
  • a few fava beans for garnishing



Put a little extra virgin olive oil in a non-stick pan, add the finely chopped onion and simmer over low heat. When the onion becomes soft and transparent, add the fava beans and the chopped tomatoes. Cook for 5 or 6 minutes over medium heat. Turn off the heat, add salt, add the oregano and let cool.


Prepare the muffins. Put the egg in a bowl, add the pecorino cheese and the oil and mix with a hand whisk.


Add the sifted flour and baking powder in 2 or 3 steps, alternating the additions with the milk, until you get a dense batter that can be stirred with a spoon.


For last, add the cooked mix of fava beans, tomatoes and onion and fold into the batter. Keep about ten beans for garnishing.


You can use peas instead of fava beans. If you don't like oregano, you can use fresh basil.
