Corn Flakes Cookies: Butter Free

Happy Monday everyone! Corn Flakes Cookies are delicious biscuits, easy to prepare and very popular here among bears! We have renamed them “cereals”… We have this curious habit of nicknaming almost everything, including food 😉 I tasted these sweets for the first time many years ago. They had been prepared by a dear friend and neighbour, and I immediately fell in love with them! I did not hesitate to ask her for her “cereals” recipe and she did not hesitate to share it with me. Since then, I’ve made them many times, experimenting with different variations. On the blog you can also find a scrumptious and very easy vegan version. I’ve prepared these very well known sweets even without added sugar, and they were really yummy too (you can find the recipe on my Instagram account). Today, I am sharing my butter free version of Corn Flakes Cookies.

When the weather gets cooler, I feel a strong desire to bake cookies. Afternoon tea parties with friends are frequent in my home, and cookies are always a very appreciated treat for my guests … Since I had some ‘corn flakes to use up, yesterday I decidet to get to work and, while I was prepared lunch, I also put together the dough and baked this butter free version of Corn Flakes Cookies. The classic recipe is with butter, which I wanted to try to replace with oil this time. I must say that the result was absolutely perfect…no envy for the traditional version! So here is my recipe for butter free Corn Flakes Cookies. They are ideal both for breakfast and for afternoon snacks. With tea they are amazing and with coffee after lunch they are so comforting. Lactose intolerants can eat them without any problems. I highly reccomend you make them friends…you won’t be sorry!

Corn flakes cookies: butter free

Simple and delicious butter free Corn Flakes cookies


  • 2 eggs
  • 150 g sugar
  • 80 ml sunflower oil (or 100 g melted butter)
  • a pinch of salt
  • one teaspoon vanilla extract
  • 300 g all purpous flour
  • 16 g baking powder
  • 2 tablespoons raisins (soaked in warm water)
  • pine nuts, hazelnuts, almonds (optional)
  • corn flakes to need



In a bowl, mix the eggs with the sugar, salt and vanilla.


Incorporate the oil and then the flour with the baking powder.


Add the raisins, which you have drained and dried and if you wish, also add pine nuts or other dried fruit. I added a tablespoon of pine nuts.


Prepare a bowl with some corn flakes. Helping yourself with a teaspoon, take small amounts of dough and roll in the corn flakes, trying to cover well. Form small balls.


Place on a baking sheet covered with parchment paper.


Bake in a preheated oven at 180°C for about twenty minutes or until lightly browned.


Serve sprinkled with icing sugar.


These cookies are very popular for parties here in Abruzzo, and in all Italy. You can substitute the raisins with chocolate chips. If you want to use butter, melt 100 g, let cool slightly , and add to the dough instead of the oil.
