Good morning, everyone! I couldn’t help but share this One Bowl Banana Cake with you. The recipe is from Donna Hay and as always, I made a few small changes to please my family’s tastes.  One Bowl Banana Cake  is very simple to make, one of those recipes that might almost seem trivial, but it isn’t at all! The banana pulp gives this cake a tender crumb, delicate and so moist … In short, a fluffy cloud of goodness! There is dark cane sugar in the batter,  instead of the usual caster, which gives an amazing caramel aroma, and the batter is butter and lactose free! I can’t express how wonderful it smelled while it was baking… So here is the recipe for delicious One Bowl Banana Cake, perfect for your breakfasts and afternoon tea and anytime you crave someting scrumptious but simple and hearty!

One Bowl Banana Cake

An easy to make and delicious banana cake.

Ingredients

  • 3 eggs
  • 250 g dark cane sugar
  • 1 teaspoon ground cinnamon
  • a pinch of salt
  • 100 ml light olive oil (or other vegetable oil)
  • the pulp of 3 very ripe bananas
  • 250 g all purpous flour
  • 2 teaspoons baking powder

Instructions

First of all, mash the banana pulp with a fork and set aside.

Whip the eggs with the sugar, cinnamon and salt until very fluffy and doubled in volume.

Add the oil and incorporate it with electric whisks, then add the pulp of the bananas.

Finally, incorporate the sifted flour with the baking powder, mixing delicately with a hand whisk or a spatula.

Pour into a well greased bundt cake pan and bake in a preheated oven at 170°C for about 30 - 40 minutes.

Serve cold, sprinkled with icing sugar.

Notes

I used a 26 cm bundt cake pan. If you like, you can add a handful of chocolate chips, chopped walnuts or pecans to the batter.
