Good morning, everyone! Pineapple Mousse is a very fresh and delicate treat, not too sweet, that is perfect as a special dessert. It is very easy to prepare and gives great satisfaction. The first time I ate this sweet was at my dear Aunt Olga’s home. She is an excellent cook and woman full of energy! I don’t remember the occasion, but I remember that her Pineapple Mousse was appreciated by all the guests!
I am sharing the recipe with you today, because I think it is also perfect for a girl’s dinner on Women’s Day. Most importantly, this mousse can be eaten by pregnant women too, and by those who don’t want to eat raw eggs, because the egg cream is cooked. Therefore, you need very few ingredients and very little time to obtain a luscious and scrumptious dish! I accompanied it with some biscuits, but this Pineapple Mousse is also delicious eaten by itself … a creamy and fluffy treat!

A creamy, deliciously refreshing, easy to make dessert
- 3 egg yolks
- 3 tablespoons sugar
- 6 tablespoons pineapple juice
- 250 gr fresh whipping cream
- 2 tablespoons icing sugar
- 3 or 4 slices pineapple (even preserved)
- biscuits to need for serving (optional)
Put the egg yolks and sugar in a saucepan and stir until blended. Add the pineapple juice and put on very low heat. Let it thicken and stir constantly.
When the mixture has become creamy, remove from the heat and set aside.
While the cream cools, whip the fresh cream with the 2 tablespoons of icing sugar until stiff peaks form.
Cut the pineapple into small pieces.
Add the whipped cream to the egg cream gently, stirring with a spatula, with movements from bottom to top.
Gently incorporate almost all the pineapple. Leave a few pieces for garnishing.
Put a little chopped biscuits on the bottom of your serving cups. Cover with the pineapple mousse.
Keep in the fridge for at least a couple of hours.
Before serving, garnish with the pieces of pineapple put aside and, if desired, with a few biscuits.
